Ingredients of Vegetable Stew
- It’s 3 of tomatoes chopped into 4 big pieces.
- Prepare 1-2 of carrots peeled.
- It’s 1/2 cup of cauliflower chopped and blanched.
- It’s 1/2 cup of broccoli blanched.
- Prepare 1/2 cup of mushrooms sauteed.
- You need 1/2 cup of beans chopped.
- Prepare 1/2 cup of sweetcorns boiled.
- Prepare 3-4 of baby corns chopped.
- It’s 2 of Jalapenos chopped.
- You need 1/2 of Beetroot optional.
- It’s 4-5 cloves of garlic.
- You need 2 tbsp of Chana dal roasted.
- You need 1 tbsp of oil.
- You need to taste of Salt and pepper.
- Prepare 1 tbsp of oregano.
- It’s 1 tbsp of chilli flakes.
Vegetable Stew instructions
- In a pan add 1/4th cup water and add tomatoes and carrots. Cover it and let it cook for about 5-8 mins. Check if Carrots are tender and drain water. Let it cool..
- Now remove the skin from tomatoes and take the mixture in a grinding jar. Add roasted Chana daal, garlic cloves and grind to a smooth paste. Add some water as required..
- Now add oil in a pan, add blanched broccoli, cauliflower, sauteed mushrooms and saute for a minute. Add all other veggies as well. Cook on medium for 5 mins..
- Now add the tomato carrot puree in the pan. Add salt, pepper, oregano and Chilli flakes. Add some water if required..
- Cover it and cook for 4-5 minutes and your vegetable stew is ready!! Serve hot..
